Monday night dinners are all mine while I'm here in Cali; plan the meal, buy the food, prepare it, the whole nine yards! It's just us kids but there's still 10 of us around the dinner table. Talk about a full house, right?! I've had to get a little creative finding meals to both feed everyone
and stay on a budget -- its been a fun challenge though! I had my first night a few weeks ago and knew immediately what I was going to make. I don't know if its because I'm from MN where the winters are 5 months too long and way to cold, but I have a little obsession with soup and could probably eat it every night. There's nothing better than a warm bowl when its -10 outside. I've never been a fan of regular chili but this kind has never gotten old and its
so easy to make.
2-3 cans of white beans
16 oz bag of corn [I only add 2/3 of the bag, but you can add the whole bag if you want]
2-4 cups of water
2 cups of cut up or shredded chicken
2 McCormick White Chicken Chili seasoning packets [OR you could use the seasonings
HERE if you don't want to buy the packets, it tastes the same]
Combine all the ingredients into a pot on the stove... heat and it's ready! Serve with cheese, sour cream, and chips. When we had it a few weeks ago we sliced up some avocados and I loved it even more. Enjoy friends!!
MMMM. that sounds delicious. and I'm looking for a good dish to make for dinner this week, soooo...I think I might have to head to Target and make it. :)
